Veggie Burgers

Yields: 4 patties
Ingredients
- 1 tablespoon oil (divided)
- 1⁄4 cup onion, chopped
- 1⁄4 cup green pepper, chopped
- 1⁄4 cup carrot, chopped
- 1⁄4 cup frozen chopped broccoli (drained and finely chopped)
- 2⁄3 cup white kidney beans or 2⁄3 cup great northern bean, drained
- 1 egg, lightly beaten
- 1⁄3 cup seasoned dry bread crumb
Directions
- Saute vegetables in half of oil until soft- about 1 minute. Cool slightly. Mash beans and mix with egg and bread crumbs. Add veggies. Chill for 20-30 minutes. Form patties. Fry in remaining oil. Serve on buns and with your favorite toppings. Makes 3-4 patties.
