Veggie Burgers

Serves: 4

Yields: 4 patties

Ingredients

  • 1  tablespoon  oil (divided)
  • 14 cup onion, chopped
  • 14 cup green pepper, chopped
  • 14 cup carrot, chopped
  • 14 cup  frozen chopped broccoli (drained and finely chopped)
  • 23 cup white kidney beans or 23 cup great northern bean, drained
  • 1  egg, lightly beaten
  • 13 cup  seasoned dry bread crumb

Directions

  1. Saute vegetables in half of oil until soft- about 1 minute. Cool slightly. Mash beans and mix with egg and bread crumbs. Add veggies. Chill for 20-30 minutes. Form patties. Fry in remaining oil. Serve on buns and with your favorite toppings. Makes 3-4 patties.
