Veggie Balls

This is a great vegan recipe! * Note that prep time doesn't include cooking the vegetables.

Serves: 4

Ingredients

  • 3  slices  whole wheat bread
  • 2  potatoes, peeled and boiled
  • 12 cup peas, cooked
  • 14 cup carrot, cooked
  • 14 cup celery, cooked
  •  vegetable oil

Directions

  1. In a bowl put bread, potatoes, peas, carrots, celery and salt.
  2. Mash all ingredients together.
  3. Make small balls with mixture.
  4. Heat 1tbsp of oil in a frying pan over medium heat.
  5. Fry until golden brown.
