Vegetarian Minestrone Soup

Ingredients
- 3 tablespoons oil
- 1 cup diced onion
- 1⁄2 cup diced celery
- 3⁄4 cup diced carrot
- 1 teaspoon crushed garlic
- 1 cup cubed eggplants or 1 cup cubed zucchini
- 1 cup chopped tomato
- 2 teaspoons salt
- 1⁄4 teaspoon pepper
- 1 teaspoon oregano
- 1 teaspoon basil
- 1⁄4 cup parsley flakes
- 2 cups tomato sauce
- 4 cups water or 4 cups stock
- 1⁄4 cup white wine
- 1⁄2 cup ditalini
Directions
- Heat oil and sauté celery, onion, and carrots for 10 minutes.
- Add remaining ingredients except pasta.
- Simmer for 30 minutes.
- Add pasta and simmer another 10 minutes.
