Vegetarian 'good Protein' Chili

Ingredients
- 1 1⁄2 cups black beans, rinsed
- 1⁄4 cup cooked brown rice
- 1 1⁄2 cups stewed tomatoes
- 1⁄2 cup onion, in med pieces
- 2 cloves garlic
- 1⁄2 cup mild salsa (can increase heat if you like)
- 1⁄2 teaspoon sea salt
- 1 teaspoon black pepper
Directions
- Put garlic and onion in blender, pulse til chunky, then add tomatoes and blend just til pureed.
- Add blender mixture, beans, rice, seasonings and salsa to a medium pot.
- Cook for 30-45 minutes to allow flavors to meld.
- Serve -- delicious 'as is', or top with sour cream, guacamole, grated cheese or whatever sounds great.
