Vegetarian Fried Rice

Ingredients
- 1 cup yellow onion, small cube
- 2 cups zucchini, small cubes
- 1 cup Japanese eggplant, small cubes
- 1 cup red bell pepper, small cubes
- 4 garlic cloves, minced
- 12 cups cooked rice, day old
- 1⁄4 cup teriyaki sauce
- oil
- salt
- 2 stalks green onions, minced
Directions
- In a wok coat with oil add vegetable mixture and saute until the vegetable is Al dente.
- Add in cooked rice and sauté and lightly toast the rice.
- Add teriyaki sauce and add salt to taste. Mix in green onion and blend.
