Vegetarian Fish Sauce Substitute

Yields: 1/2 cup
Ingredients
- 5 tablespoons water, microwaved until very hot (just a few seconds will do it)
- 1⁄4 cup turbinado sugar
- 1⁄4 cup low sodium soy sauce
- 3 tablespoons unseasoned rice vinegar
- 2 teaspoons lime juice
- 4 garlic cloves, minced (about 4 teaspoons)
- 2 teaspoons finely chopped red thai bird chiles
Directions
- In a small bowl stir the sugar into the 5 tablespoons hot water.
- Cool; stir in remaining ingredients.
