Vegetarian Coconut Cashew Curry

Ingredients
- 1 large sweet potato
- 1 red pepper, seeded and thinly sliced
- 2 small potatoes, peeled and chopped (I used red)
- 1⁄2 medium onion
- 2 cups vegetable broth
- 2 cups unsweetened coconut milk
- 2 tablespoons yellow curry powder
- 1 tablespoon red curry paste
- 1 teaspoon cumin
- 1 teaspoon salt (or to taste)
- 1⁄2 teaspoon cayenne pepper (or to taste)
- 1⁄2 cup roasted cashews
- 2 cups cooked jasmine rice
- 1 cup green beans
Directions
- sautee potatoes with curry powder / paste in a large pan. Add remining ingredients.
- Simmer until potatoes are cooked through. enjoy over rice.
