Vegetable Stock

Great vegetarian stock.

Ready In: 40 mins

Yields: 2 liters

Ingredients

  • 4  medium carrots, peeled and cut into chunks
  • 2  stalks celery, tough strings peeled, stalks cut into chunks
  • 2  medium onions, roughly chopped
  • 1  leek, halved lengthwise and washed thoroughly
  • 2  fresh garlic cloves
  • 2 14 quarts water

Directions

  1. In a large pot, combine all ingredients.
  2. Bring to a boil.
  3. Reduce heat to a simmer and cook for 25 minutes.
  4. Strain stock and reserve for soups and sauces.
