Vegetable Stock

Yields: 8 cups
Ingredients
- 1⁄2 cup dried porcini mushrooms or 1 rind parmigiano-reggiano cheese
- 2 medium onions, thinly sliced
- 4 medium carrots, chopped
- 1 medium leek, cleaned thoroughly and thinly sliced
- 3 celery ribs, sliced thin
- 6 garlic cloves, sliced
- 10 cups cold water
Directions
- Place all the ingredients in a large stock pot. Cover with water.
- Bring to a boil. Reduce heat and simmer for 1 hour.
- Strain.
