Vegetable Soup With Tortellini

Ingredients
- 16 ounces frozen cheese tortellini
- 1 1⁄2 cups of chopped carrots
- 1 1⁄2 cups celery
- 1⁄2 of a medium red onion
- 1 (14 1/2ounce) can beef broth
- 3 (14 1/2ounce) cans chicken broth
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon garlic powder
- 1⁄8 teaspoon black pepper
- 1⁄2 teaspoon salt
- 8 ounces shredded cheese
- 1 tablespoon olive oil, for sauting
- diced Rotel Tomatoes, with mild chilles
Directions
- Saute chopped veggies in olive oil til tender about 4 minutes when tender add broths, tomatoes and seasonings. Bring to a boil, add tortalini's let simmer uncovered about 10 minutes serve hot with shredded cheese and enjoy.
