Ingredients
- 2 cups water
- 32 ounces vegetable broth
- 1 green pepper, chopped
- 2 small yellow onions, chopped
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1⁄2 lb kale, chopped
- 2 small yukon gold potatoes, chopped and mashed
- 1 (8 ounce) can green beans
- 1 (8 ounce) can kidney beans
- 1 cup brown rice
Directions
- boil water/broth, add potatoes till soft and mash. Add ingerdients and simmer.
