Vegetable Salsa

How can something that looks and tastes this good be made from vegetables? This is a hit everywhere I take it. In the spirit of fairness, I do not remember where I found this recipe.

• Ready In: 1 hr 30 mins
• Yields: 6 Cups(at least. I always end up with a lot.)

Ingredients

• 1  large zucchini, diced
• 1  large  yellow squash, diced
• 1  large red onion, diced
• 1  large red bell pepper, diced
• 1  large green bell pepper, diced
• 1  large carrot, peeled and diced
• 1  large cucumber, peeled and diced
• 3  large tomatoes, chopped
• 3  tablespoons red wine vinegar
• 1  bunch green onion, thinly sliced
• 1  cup  V8 vegetable juice
• 1  tablespoon olive oil

Directions

1. Mix all and let stand at least one hour.
