Vegetable Risotto (Presssure Cooker)

Ingredients
- 1 large onion, halved and thinly sliced
- 3 celery ribs, chopped
- 1 (15 ounce) can whole canned tomatoes, drained and chopped
- 1 1⁄3 cups arborio rice
- 3 cups chicken broth
- 1⁄4 cup grated parmesan cheese (to garnish)
Directions
- Coat pan interior with nonstick spray. Saute onions and celery, then add tomatoes and rice and cook uncovered until rice is translucent. Add chicken broth, bring to high pressure quickly, cook 5 minutes. Cool quickly under cold water. Top with cheese and serve.
