Vegetable Kurma

Ingredients
- mixed spice (coconut, cumin seeds, cardamon, beacon, kadala paruppu)
- 1 carrot
- 10 green beans
- 1⁄4 cauliflower
- 1 red onion
- 3 tomatoes
- 1⁄2 teaspoon ginger-garlic paste
- 2 teaspoons vegetable oil
- 1 teaspoon red chili powder
- 1⁄2 cup roasted cashews
- 1 teaspoon salt
Directions
- Roast items mentioned under mixed spice and mixed spice in blender.
- Microwave cauliflower, green beans, carrot with little vegetable oil.
- Add salt and fry the vegetables in a seperate pan.
- Roast cashews in butter and add to roasted red onion, tomatoes and ginger garlic paste.
- Blend cashews,red onion and tomatoes.
- Add Blended tomato mix with fried vegetables.
- Keep low flame, add mixed spice blended, 1 tsp red chili powder, 1 tsp salt.
