- Spray the bottom of a fry pan with non stick cooking spray.
- Sautee veges over a medium heat.
- Pour the beaten eggs over the sauteed vegetables.
- Sprinkle the cheese on top.
- Cover and cook on a low-med heat until cheese is melted and egg is cooked.
- Remove from heat.
- Let it cool slightly before slicing and serving.
- Enjoy! :-).
