Vegetable Chowder

Ingredients
- 2 cups diced potatoes
- 2 cups cauliflower, chopped
- 1 cup onion, chopped
- 1 (20 ounce) can tomatoes, mashed
- 2 teaspoons salt
- 3⁄4 teaspoon pepper
- 1⁄2 teaspoon oregano
- 1 beef bouillon cube
- 3 cups water
- 3 tablespoons margarine
- 1⁄4 cup flour
- 2 cups milk
- 1⁄2 teaspoon dry mustard
- 1 tablespoon Worcestershire sauce
- 1 cup grated cheddar cheese
Directions
- Put the first nine ingredients on to boil until the vegetables are just tender.
- Do not overcook.
- Melt margarine in a saucepan.
- Add flour.
- Gradually whisk in milk, allowing to thicken.
- Add mustard, worcestershire and cheese.
- Pour the saucepan mixture into the vegetable mixture and serve.
