Vegetable Casserole

Ingredients
- 1 (16 ounce) package frozen spinach
- 1⁄4 cup butter, divided
- salt
- black pepper
- 2 cups potatoes, cubed, cooked
- 1 cup milk
- 2 cups cooked carrots
- 2 cups green beans, cooked
- 1⁄2 teaspoon paprika
Directions
- Preheat oven to 375 degrees. Lightly grease 4 quart casserole or roasting pan.
- Cook spinach according to package directions, drain. Spread spinach in prepared casserole, dot with 1 tablespoon butter and season with salt and pepper.
- mash potatoes with milk and 1/2 cup butter until creamy.
- Layer half of potatoes, carroes, carrots and beans over spinach. Dot with another 1 tablespoon butter, season with salt and pepper.
- Top with remaining potatoes. Dot with remaining 2 tablespoons butter and sprinkle with paprika. Bake 1 hour or until heated through and lightly browned.
