Vegetable Beef with Rice Soup

Ingredients

  • 12 lb ground beef
  • 1  tablespoon  oil
  • 12 cup  uncooked rice
  • 1 (14 1/2ounce) can diced tomatoes
  • 2 (14 ounce) cans beef broth
  • 1 34 cups water
  • 1 (16 ounce) package  frozen mixed vegetables
  •  salt and pepper

Directions

  1. Brown ground beef in oil.
  2. Stir frequently to break up large pieces.
  3. Drain off fat.
  4. Add rice, tomatoes, beef broth and water.
  5. Bring to a boil, then cover and lower to simmer for 10 minutes.
  6. Add mixed vegetables and cook 10 minutes longer.
  7. Add salt and pepper to taste.
