Vegetable and Bacon Gratin

  1. Preheat oven to 375 degrees F.
  2. Heat a skillet over medium high heat. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon, leaving the fat in the skillet.
  3. Add the onions, bell peppers, parsnips and garlic and cook until tender.
  4. Add the thyme and season with salt and pepper. Stir in the spinach.
  5. Transfer the mixture to a bowl with the reserved bacon. Allow to cool slightly.
  6. Add the eggs. Stir well and transfer to a small casserole dish. Cover with foil and bake for 20 minutes.
  7. Remove the foil. Sprinkle with cheese and bake until cheese is browned. Serve warm.
