Vegan Thai Pizza

Ingredients
- 1 naan bread, flatbread (or made from scratch pizza crust)
- 1⁄2 cup vegan thai peanut sauce
- 1⁄2 cup carrot, matchstick sliced
- 1 mushroom, sliced
- 1⁄4 cup tomatoes, sliced
- 1⁄4 cup onion, sliced
- 1⁄4 cup green onion top, sliced
- 1⁄2 serrano pepper, thinly sliced
- salt & pepper, to taste
Directions
- Preheat oven to 375.
- Spread warmed peanut sauce on flatbread or pre-baked crust.
- Layer remaining vegetables on peanut sauce covered crust.
- Top with green onions, salt & pepper.
- Bake for 12-14 minutes until crust starts to crisp up and brown.
