- Heat the oil in a large skillet or wok over medium high heat. Add the onion and celery and sauté until golden.
- Stir in the tomato and seasonings. Bring to a simmer.
- Add the beans and simmer for 30 minutes on very low heat.
- Divide the lettuce evenly onto 4 plates. Top with 1/4 of the stewed beans and then arrange sliced avocado over all.
