Vegan Spice Cake

Ingredients
- 1 1⁄2 cups flour (I used unbleached flour)
- 1 cup white sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄2 teaspoon ginger
- 1⁄2 teaspoon allspice
- 1⁄4 teaspoon clove
- 1⁄2 cup raisins
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 1⁄3 cup oil
- 1 cup ginger ale
Directions
- Combine flour, sugar, baking powder, salt and spices in a mixing bowl.
- Add vinegar, vanilla, oil, and ginger ale to the dry ingredients - stirring until just mixed.
- Fold in raisins.
- Pour batter into a greased and floured 8x8 cake pan.
- Bake at 350F for 30-40 minutes or until cake tester comes out clean.
