Vegan Raspberry Mocha Cake

Ingredients

  • 3  cups flour
  • 1 12 cups sugar
  • 2  teaspoons baking soda
  • 12 cup  cocoa
  • 14 cup  oil
  • 1 12 teaspoons vanilla
  • 2  tablespoons vinegar, dissolved in
  • 14 cup water
  • 34 cup  strong brewed coffee or 34 cup  espresso
  • 34 cup  raspberry preserves
  •  chocolate frosting (optional)

Directions

  1. Mix together flour, sugar, baking soda, and cocoa in a large mixing bowl.
  2. Slowly incorporate oil and vanilla, then vinegar and water, and finally the coffee and raspberry preserves.
  3. Mix the batter until it is smooth and creamy.
  4. Pour into a greased cake pan and bake at 350 degrees for 25 minutes or until a toothpick comes out clean.
  5. Allow to cool before frosting.
