Directions

  1. Cook veggie chicken patties (I use the microwave for about two minutes to two and a half minutes for two patties.) Set aside to cool.
  2. Dice all vegetables, fruit, and veg chicken patties according to how chunky you want your sandwich and place in a big bowl.
  3. Add veganise to the veggies and fruit and mix well. (I usually leave the lettuce and spinach out of the veganaise mix.).
  4. Slice the pita bread into halves to make 4 pockets.
  5. Warm the bread slightly. This seems to make it a little more elastic when stuffing it. I find about 15-25 seconds in the microwave does the trick.
  6. Put chopped lettuce and spinach in the bottom. Add the veggie/fruit mix to the pita pockets and top off with a little more lettuce and spinach.
