Vegan Pineapple Tofu

Ingredients
- 1 lb firm tofu, cut into triangles
- 1 cup sweet and sour sauce
- 1 cup pineapple juice
- 1 cup pineapple chunk
- 1⁄4 cup soy sauce
Directions
- Mix all of the ingredients in a ziploc bag. Let sit for one hour.
- Pre-heat the oven to 375°F (185°C).
- Put the mix into a casserole. Cover with foil. Bake for one hour.
- Serve with rice on the side.
- I asked to comment, but was directed to "correct" the recipe. I am sorry to read: "Mix all of the ingredients in a ziploc bag." and then "Cover with foil.". Why waste the PLASTIC and the ALUMINIUM? Why allow the acetic mixture of pinapple juice sit in plastic that surely contains BPA and phtalates?
- I suggest that the recipe should read:
- Mix all of the ingredients in a glass or ceramic casserole. Cover with casserole cover (not with foil or plastic). Let sit for one hour at room temperature.
- Pre-heat the oven to 375°F (185°C).
- Put covered casserole into pre-heated oven and bake for one hour.
- Serve with rice on the side.
