Vegan Oatmeal Cookies

Ingredients
- 1 1⁄2 cups rolled oats
- 2 cups apple juice, boiling
- 1⁄4 cup brown rice flour
- 2 tablespoons sesame oil
- 1⁄2 cup whole wheat pastry flour
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1⁄2 cup raisins (or carob chips)
Directions
- Preheat oven to 375°F.
- In a dry, heated skillet, toast oats until lightly browned.
- Add to boiling apple juice and let sit for 5 minutes.
- Stir in the rest of the ingredients and drop by spoonfuls onto a well-oiled baking sheet.
- Bake 15 minutes until golden-brown.
