Vegan Mexican Tartlets Ww-1 Point

I adapted this from another recipe and it is DELICIOUS! Even my 17 month old loves them! If you want to make this vegan just make sure your won ton wrappers and "meat" are vegan. Enjoy! note: This recipe can be made with TVP or Boca crumbles and taco seasoning. I personally used "Old World" vegetarian taco meat filling which I got at Rainbow. Show more

  1. Make vegan taco meat, add beans to mix.
  2. In a hot skillet "char" the corn until it is browned on each side, mix into meat/bean mix Add salsa, sweet potato and brown rice.
  3. Place won ton wrappers in cupcake pan (the edges will stick up like points) and scoop 1/8 to 1/4 cup of mix per won ton wrapper.
  4. Bake at 350°F for 10-15 minutes until points brown and are crispy.
  5. Let sit for a few minutes if the bottom is still soft as they will continue to cook and harden a little while standing in the hot pan.
