Vegan Mexican Tartlets Ww-1 Point

Ingredients
- 30 wonton wrappers
- 1 (16 ounce) can sweet potato puree
- 2 cups frozen sweet corn
- 1 (16 ounce) can black beans, rinsed
- 2 cups Mexican vegetarian ground meat substitute
- 1 cup salsa
- 2 cups brown rice, cooked
Directions
- Make vegan taco meat, add beans to mix.
- In a hot skillet "char" the corn until it is browned on each side, mix into meat/bean mix Add salsa, sweet potato and brown rice.
- Place won ton wrappers in cupcake pan (the edges will stick up like points) and scoop 1/8 to 1/4 cup of mix per won ton wrapper.
- Bake at 350°F for 10-15 minutes until points brown and are crispy.
- Let sit for a few minutes if the bottom is still soft as they will continue to cook and harden a little while standing in the hot pan.
