Vegan Macaroni and Cheese

Ingredients
- 1 1⁄2 cups plain nondairy milk
- 1 cup water
- 1⁄3 cup tamari
- 1 1⁄2 cups nutritional yeast
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon salt
- 4 ounces firm tofu
- 1 cup refined coconut oil (melted)
- 1 1⁄2 lbs pasta
- 1 cup vegan cheese, shredded (optional)
Directions
- Preheat oven to 350°F.
- Cook pasta according to package directions.
- Blend all other ingredients in a blender of food processor.
- Put cooked pasta in 9 x 13 baking pan.
- Pour sauce over pasta and mix together.
- Top with vegan cheese.
- Bake about 15 minutes.
