Vegan Goddess Dressing

Ingredients
- 1⁄2 cup raw cashews
- 1⁄4 cup water
- 2 tablespoons olive oil
- 2 garlic cloves
- 1 teaspoon miso
- 1⁄2 teaspoon sea salt
- 3 tablespoons lemon juice
- 1 teaspoon agave nectar
- fresh herb
Directions
- In a small saucepan bring 2 cups water to boil. Remove from heat, add cashews, cover, and set aside for 30+ minutes. Drain cashews. Place all ingredients in a blender along with some fresh herbs-chives, tarragon and chervil or parsley for a traditional Green Goddess, or substitute the lemon juice for lime juice and add jalapenos, green onions, and cilantro for something with a bit more kick. Blend until smooth.
