Vegan Brownies

Ingredients
- 1 cup white flour
- 3⁄4 cup cocoa powder, sifted
- 1 1⁄4 cups sugar
- 1⁄8 teaspoon baking powder
- 1⁄2 teaspoon salt
- 3⁄4 cup chocolate chips (optional)
- 1⁄4 cup walnuts, chopped (optional)
- 1⁄3 cup soymilk
- 1⁄3 cup canola oil
- 1⁄4 cup silken tofu
- 1 tablespoon vanilla
Directions
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, salt, plus walnuts and chocolate chips if using.
- In a blender, blend the soy milk, oil, tofu and vanilla.
- Add blended liquid to dry ingredients and stir until combined. The batter will be very thick.
- Spread evenly in a greased 8 inch square pan.
- Bake 35 minutes, or until edges are dry and centre is still moist-looking.
