Vegan Breakfast Cookies

Ingredients
- 1⁄4 cup brown sugar
- 1⁄4 cup agave nectar
- 1⁄4 cup soymilk
- 1⁄4 cup non-hydrogenated vegan margarine
- 6 ounces silken tofu
- 1 tablespoon vanilla
- 1 banana
- 2 cups whole wheat pastry flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup oatmeal
- 1 large apple
- 1 cup carrot, shredded
- 1 cup pecans, chopped
Directions
- Cream first 7 ingredients. (May be chunky from banana).
- Sift together dry ingredients and slowly add into the creamed mixture.
- Fold in Apple, carrot, and nuts.
- Bake for 14 minutes at 350.
