Vanilla Cream Wafers

I have not tried this recipe. I got it from recipe box from an estate sale. The recipe was submitted by Shauna Stilts of Bryson, California.

• Serves: 8-10

Ingredients

• 1⁄2 cup butter
• 1⁄2 cup sugar
• 1  egg
• 1  teaspoon vanilla
• 1⁄4 teaspoon  grated lemon rind
• 3⁄4 cup  sifted cake flour

Directions

1. Preheat oven to 375°F
2. Cream until light butter, and sugar.
3. Beat in egg, vanilla, and grated lemon rind.
4. Add cake flour.
5. Drop small amount of batter with a teaspoon onto greased cookie sheet.
6. Bake 7 minutes or until rims are tan.
