Uper Chocolatey Coca Cola Cake

I remember my Grandmother making this rich, chocolatey cake when I was a child and loved it. When it came to me on line I couldn't wait to save it for later use. You can expect a moist chocolate cake with a glossy, sweet chocolate and pecan icing. Show more

  1. CAKE:
  2. Preheat oven to 350 degrees.
  3. Grease and flour a 11 X 13 pan.
  4. In a medium saucepan, combine Coke, oil, butter and cocoa and bring it to a boil.
  5. In a large bowl, combine sugar, flour and salt.
  6. Pour Coke mixture into the flour mixture and mix well.
  7. Add eggs, buttermilk, baking soda and vanilla and mix well.
  8. Pour in to prepared pan and bake for 25 - 30 minutes or until a toothpick comes out clean.
  9. FROSTING:
  10. n a medium saucepan, combine butter, cocoa and milk.
  11. Heat until butter melts and mix well.
  12. Add vanilla, confectioners sugar and mix well.
  13. Fold in pecan pieces.
  14. Spread on cake while still warm.
