Unfried Green Tomatoes

I'd like to think this is WAY healthier than regular fried green tomatoes, but it tastes so good, I'm not sure. Show more

Ingredients

  • 2  large green tomatoes
  • 12 cup  panko  Japanese-style bread crumbs
  • 12 cup  crushed  Fiber One cereal
  •  garlic salt
  •  pepper
  • 12 cup buttermilk

Directions

  1. Heat oven AND cookie sheet @ 425. Mix crumbs, fiber one, salt and pepper in a bowl. Pour buttermilk into a different bowl. Slice tomatoes to desired thickness, I sliced mine about 1/3" thick. Dip tomatoes in milk, dip in breadcrumbs and place on cookie sheet sprayed with Pam. Bake for 15 minutes, then flip and bake for 10 more minutes. Serve with ranch dressing.
