Uncle Jon's Mashed Potatoes

Ingredients
- 1 yellow onion, diced
- 2 small shallots, minced
- 4 garlic cloves, minced
- 4 tablespoons butter, divided
- 3 lbs potatoes (red or creamer are best)
- milk
- salt and pepper
- 2 teaspoons horseradish
Directions
- Sauté the onion, shallots and garlic in 1 Tablespoon butter until starting to caramelize.
- In the meantime boil potatoes until soft.
- Drain and mash the potatoes with a mixer or potato masher.
- Add the remaining 3 Tablespoons butter until melted.
- Add the onion mixture,.
- Start adding milk until the potatoes are the right consistency.
- Taste for salt and pepper; add the horseradish.
- Taste and add more butter, salt and pepper, or horseradish as needed.
