Uncle George's Apple Pie

This is a recipe that I created for my Uncle who is diabetic. No one knew it was sugar free until it was gone! Now this the first pie to disappear at every holiday. Show more

  1. Preheat oven to 425°F.
  2. Peel core and slice apples, toss with lemon juice, set aside.
  3. Melt butter in saucepan, stir in flour, cornstarch, spices, Splendas, apple juice, vanilla and rum. Bring to a boil, reduce heat and simmer for 5 minutes.
  4. Line 9” glass pie plate with half of pastry.
  5. In large bowl, gently toss apples with sauce, ensuring all apples are coated. Pour apple mixture into crust.
  6. Roll out remaining pastry to fit top of pie.
  7. Cover apples with remaining pastry, seal and crimp edges
  8. Cut slits in top of pie.
  9. Stir cream and egg yolk. Brush on top of pie.
  10. Bake at 425F for 15 minutes. Reduce heat to 350 degrees and bake 40-45 minutes or until golden brown.
  11. Remove from oven and let cool 1 hr before serving.
