Uncle George's Apple Pie

Ingredients
- 8 granny smith apples
- 4 mcintosh apples
- 1⁄2 cup Splenda sugar substitute
- 1⁄2 cup packed Splenda brown sugar blend
- 3 tablespoons flour
- 2 teaspoons cinnamon
- 1⁄4 teaspoon allspice
- 1⁄4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 3 tablespoons cornstarch
- 1 1⁄2 tablespoons brandy (optional)
- 1 teaspoon vanilla extract
- 1⁄4 cup unsweetened apple juice
- pastry dough, for never fail double crust pie
- 1⁄2 cup unsalted butter
- 1 tablespoon heavy cream
- 1 egg white
Directions
- Preheat oven to 425°F.
- Peel core and slice apples, toss with lemon juice, set aside.
- Melt butter in saucepan, stir in flour, cornstarch, spices, Splendas, apple juice, vanilla and rum. Bring to a boil, reduce heat and simmer for 5 minutes.
- Line 9” glass pie plate with half of pastry.
- In large bowl, gently toss apples with sauce, ensuring all apples are coated. Pour apple mixture into crust.
- Roll out remaining pastry to fit top of pie.
- Cover apples with remaining pastry, seal and crimp edges
- Cut slits in top of pie.
- Stir cream and egg yolk. Brush on top of pie.
- Bake at 425F for 15 minutes. Reduce heat to 350 degrees and bake 40-45 minutes or until golden brown.
- Remove from oven and let cool 1 hr before serving.
