Unbelievably Easy Spice Cake

You won't believe this cake came from a box! It's luxuriously moist, and the pumpkin gives it a lovely orange fall color. Our favorite variation of this recipe is Apple Spice Cake, made by adding 3 apples (cored, peeled, and chopped in food processor) to the batter, as well as adding extra cinnamon and pumpkin pie spice. We also love topping this cake with a delightful powdered sugar glaze or cream cheese frosting!

Ingredients

• 1 (16 1/2ounce) box  spice cake mix
• 1 (15 ounce) can pumpkin
• 1  egg
• 1⁄4 cup water
• 1⁄2 teaspoon cinnamon or 1⁄2 teaspoon pumpkin pie spice, to taste

Directions

1. Preheat oven to 350°F.
2. Grease 13x9 inch baking pan with shortening or oil spray.
3. Mix all ingredients together until well blended.
4. Spread evenly into greased baking pan.
5. Bake at 350°F for 25 - 30 minutes, or until knife/toothpick inserted in center comes out clean.
6. **For Apple Spice Cake:** add 3 apples (cored, peeled, and chopped in food processor) to batter.
