Umberto's Calves' Liver

Yields: 2 lbs, liver
Ingredients
- 2 lbs liver, cut into small pieces
- 3 tablespoons butter
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 1⁄2 lemon, juice of
- salt and pepper
- 1⁄4 cup white wine
- 1 (4 ounce) can mushrooms
- 1 tablespoon parsley, chopped
Directions
- Melt butter, add the onion, garlic, lemon juice, salt, pepper, and liver. Cook for 5 minutes over hot fire, shuffling pan constantly. Add wine, mushrooms and parsley. Cook 3 minutes more.
