Ultra Rapid Spelt Bread (Bread Machine)

A wonderfully light loaf of whole-grain bread in less than one hour! Uses freshly-milled spelt and the ultra rapid bake cycle on the bread machine for time-challenged cooks who want to make bread from freshly milled whole-grain flour, but don't have three hours to wait.

Ingredients

• 1  egg
• 1  cup water
• 2  tablespoons olive oil
• 2  tablespoons honey
• 1  teaspoon salt
• 4  cups  freshly milled  spelt flour (2 1/4 cups spelt berries)
• 2 1⁄2 teaspoons  yeast

Directions

1. Place ingredients in bread machine pan in the order recommended by manufacturer.
2. Select the ultra rapid or super rapid cycle.
