Ultimate Pumpkin Bread

Ingredients
- 5 eggs
- 1 1⁄4 cups vegetable oil
- 1 (15 ounce) can solid-pack pumpkin
- 2 cups flour
- 2 cups sugar
- 2 (3 ounce) packages cook & serve vanilla pudding mix
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
Directions
- In a mixing bowl, beat eggs.
- Add oil and pumpkin; beat until smooth.
- Combine remaining ingredients; gradually beat into pumpkin mixture.
- Pour into 5 (5 x 2 1/2") OR 2 (8 x 4") loaf pans.
- Bake the 5" pans at 325^ for 50 to 55 minutes OR 75 to 80 minutes for the 8" pans.
- Cool in pans 10 minutes before removing to cool on racks.
