Ultimate Pimento Dip

I gobbled up this wonderful dip at a restaurant near us. I loved it so much I had to try to recreate it at home. My friends and family raved about it. Enjoy! The best gouda cheese to use is Parrano. It is an Italian-type gouda that is a little firmer in texture. You can now find it at most grocery stores and Whole Foods. You can use any type of smoked gouda.

• Yields: 3 cups

Ingredients

• 1 1⁄4 cups mayonnaise
• 1 1⁄4 cups sour cream
• 4  ounces pimientos, chopped and not drained
• 2  jalapenos, finely diced
• 8  ounces sharp white cheddar cheese, finely shredded
• 8  ounces gouda cheese, finely shredded
• 8  ounces smoked gouda cheese, finely shredded

Directions

1. Fold all ingredients together in a large bowl and serve with crackers or tortilla chips. Store in refrigerator.
