Ultimate Decadent Muffins

This muffin has carrots, apples, coconut, nuts, pineapple, raisins. It is a really moist muffin as it has cream cheese and sour cream. It is truly decadent.

Ingredients

• 2 1⁄2 cups flour
• 2 1⁄2 cups brown sugar
• 2  teaspoons baking soda
• 2  teaspoons baking powder
• 2  teaspoons cinnamon
• 1⁄4 teaspoon nutmeg
• 1⁄2 teaspoon salt
• 2  cups carrots, grated
• 1  cup golden raisin
• 1⁄2 cup walnuts (or your favorite nuts)
• 1  cup coconut
• 1  apple, which has been peeled and chopped
• 1 (8 ounce) can crushed pineapple (drained)
• 4  eggs
• 1  cup  of melted butter
• 8  ounces cream cheese (softened)
• 1  cup sour cream
• 3  teaspoons vanilla

Directions

1. Preheat oven to 340 F degrees.
2. Mix all the first 13 ingredients together.
3. Beat the eggs, butter, cream cheese, sour cream and vanilla together with mixer.
4. Stir the flour mixture with the butter mixture. Mix well.
5. Spoon into well greased muffin tin.
6. Bake at 340 F or until toothpick test is completed.
