Ube Waffles With Avocado and Eggs

  1. To make the waffles, in a large bowl, whisk together the flour, baking powder, sugar and salt. In a separate bowl, whisk together the eggs, milk, ube, and vegetable oil until well combined. Pour into the dry ingredients and stir with a rubber spatula until the mixture comes together. Try not to over mix.
  2. Pour the mixture by the 1/3 cup into a preheated greased waffle iron. Cook until lightly golden and crispy, according to the directions on your waffle iron.
  3. Transfer to a wire rack and keep warm in a preheated 250 degree F oven, while you continue to make the rest.
  4. Scoop out the avocado and place it in a medium bowl. Using a fork, mash together with the lime juice, salt, pepper, and a pinch of crushed red pepper flakes.
  5. To assemble the waffles, top each with a bit of the mashed avocado, a fried egg, and sprinkle with crushed red pepper flakes, red onion, feta and parsley. Serve immediately and enjoy.
