Ingredients

  • 12 cup butter, softened
  • 23 cup white sugar
  • 1 13 cups all-purpose flour
  • 2  teaspoons baking powder
  • 12 teaspoon salt
  • 12 cup milk
  • 2  egg whites, room temperature
  • 2  ounces  semi-sweet chocolate baking squares, finely grated
  • Vanilla Icing

  • 1 12 cups icing sugar
  • 3  tablespoons butter, softened
  • 1 12 tablespoons water
  • 12 teaspoon vanilla
  • 2  ounces  semisweet chocolate, baking squares chopped
  • 1  tablespoon butter

Directions

  1. Beat butter and sugar until light and creamy.
  2. Combine flour, baking powder and salt in small bowl. Add flour mixture to butter mixture in 2 additions, alternating with milk in 1 addition, beginning and ending with flour.
  3. Beat egg whites in separate bowl until stiff peaks form. Fold into batter until no white streaks remain.
  4. Fold in grated chocolate.
  5. Spread evenly in greased 9x9-inch baking pan.
  6. Bake in 350°F oven for 35 minutes or until golden. Let stand in pan on wire rack until cooled completely.
  7. Vanilla icing: Beat first 4 ingredients in small bowl until smooth, adding more water or icing sugar if needed until spreading consistency. Spread evenly over first layer. Let stand for at least an hour until set.
  8. Heat chocolate and butter in small saucepan on lowest heat, stirring often, until chocolate is almost melted. Do not overheat. Remove from heat. Stir until smooth. Cool slightly. Spread evenly over icing. Chill until top layer is set.
