  1. To make crust: Cut together flour and butter until crumbly, add sugar and water and quickly mix together into a dough. Roll the dough into a ball and wrap in clingfilm; place in the fridge for 30 minutes.
  2. Preheat oven to 200°C.
  3. Roll the dough out and line a 24 cm (9") pie dish.
  4. To make topping: cut together all ingredients until crumbly.
  5. Filling: Peel fruit if you prefer. Slice or cut into pieces. Sprinkle with lemon juice to prevent them from turning brown.
  6. Mix together cinnamon, ginger, sugar and dry breadcrumbs. Sprinkle some of the mixture on the dough.
  7. Layer fruit and spice mixture in the pie dish.
  8. Sprinkle topping evenly over filling.
  9. Bake in the preheated oven for 30 minutes or until the fruit is tender and the topping has turned golden.
  10. Serve warm with whipped cream or vanilla sauce.
