Tuscan Salad

Ingredients
- 1 cup chopped red onion
- 1 cup chopped tomato
- 1 cup chopped red pepper
- 1⁄4-1⁄3 cup capers
- 1⁄3 cup pine nuts, toasted
- 1⁄2 cup balsamic vinegar
- 1⁄2 cup olive oil
- 1⁄4 fresh basil
- red leaf lettuce, and
- romaine lettuce
Directions
- Toast pine nuts.
- Chop red onion, tomato, red pepper, and fresh basil.
- Combine with the balsamic vinegar, olive oil, and capers.
- Mix ingredients together until evenly coated and then place on a bed of washed red leaf and romaine.
- Top with toasted pine nuts and serve.
