Turnip & Potato Casserole, Monroe, La

Taken from "Cotton Country Collection", Monroe, LA. A good way to get people, including myself, to eat turnips! I would suggest "mashing" with an electric mixer, as this will make dish fluffier.

• Serves: 4-6

Ingredients

• 2  cups potatoes, peeled and cut up
• 2  cups turnips, cut up
• 1  teaspoon salt
• 1⁄2 teaspoon pepper
• 4  tablespoons butter
• 1⁄2 cup cheddar cheese, grated

Directions

1. Cook potatoes & turnips in boiling salted water until tender. Drain.
2. Rice & mash adding salt, pepper, & butter.
3. Spoon mixture into 1 quart buttered casserole & top with grated cheese.
4. Bake in 300 F oven until cheese has melted.
