Turkey With Cranberries and Orange Sauce

Ingredients
- 2 cups orange juice
- 1 orange, juice and zest of
- 3 tablespoons orange marmalade
- 2 ribs celery, sliced
- 1 cup cranberries
- 1 (9 ounce) package rice (brown and white rice mix)
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon white pepper
- 1 lb turkey breast, cut into thin strips
- 1 (9 ounce) package frozen french-style green beans
- 3⁄4 cup pecan halves
- 1⁄4 cup chopped parsley
Directions
- In a skillet, combine all of the orange juice, zest, orange marmalade, celery and cranberries. Heat to boiling over high heat.
- Reduce heat to low. Stir in rice, salt, pepper and turkey.
- Cover and simmer 15-20 minutes, until turkey and rice are almost cooked.
- Add frozen green beans in a ring outside edge of pan. Sprinkle pecans in center of turkey mixture.
- Cover and cook over medium low heat 10-15 minutes longer, until beans are hot. Garnish with parsley.
