Turkey Veggie Meatloaf

I experimented a bit with a meatloaf recipe. I had it for lunch and it was pretty darned good. Pam says "Although I think I'd make a slight adjustment for next time as noted below". I found this recipe on Pam Tremble's website. I have not tried this recipe, but I'm posting this for safe keeping. Show more

Serves: 8

Yields: 8 loaves

Ingredients

  • 1  lb ground turkey
  • 12 cup  shredded carrot
  • 12 cup  diced zucchini
  • 12 cup  diced mushroom
  • 12 cup black beans
  • 12 cup  breadcrumbs
  • 1  tablespoon  Mrs. Dash seasoning mix (1 capful)
  • 1  egg
  • 12 cup diced tomatoes (this is the adjustment I'll try next time to add moisture) or 12 cup  fresh salsa, opt (this is the adjustment I'll try next time to add moisture)

Directions

  1. Mix all ingredients together. Divide into 8 equal portions and pack into mini meatloaf pan. (Pam says "I used this. But you could use a normal loaf pan for one large meatloaf or a muffin tin for smaller individual servings").
  2. Bake at 350 for 30 minutes or until done. ("Pam says I love mine with ketchup").
