Turkey-Veggie Meatball Subs

I adapted this recipe from a Cooking Light recipe. It's super easy and really delicious!

Yields: 6 subs

Ingredients

  • 1 12 lbs ground turkey
  • 12 cup  dry breadcrumbs (I use Panko)
  • 34 cup  shredded carrot (you can substitute zucchini for some of the carrot)
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 14 teaspoon garlic
  • 1  egg
  • 24  ounces  marinara sauce
  • 6  whole wheat sub  rolls
  • 1 12 cups mozzarella cheese

Directions

  1. Preheat oven to 400°.
  2. Combine ground turkey, breadcrumbs, carrots, salt, pepper, garlic, and egg in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.
  3. Once the meat balls are done, transfer them to a pan and heat them up with the marinara sauce. While the meatballs and sauce are heating up, toast the sub rolls in the oven for a few minutes. Once the sauce is heated and the subs are toasted, assemble the meat balls (about 4 or 5 meatballs) on one side of the sub, top with cheese, and put the other half of the sub on the meatballs.
